This is another one from eatingwell.com We use to eat Pimiento cheese sandwiches for years when we was growing up. Our best friends make something like this too and she dont cook, If she does someone needs to be there watching and reminding her that she is cooking….joking Allie love ya. this is a easy recipe and goes good with chips and or crackers.

1/4 cup low-fat mayonnaise
1 4-ounce jar sliced pimientos, drained and chopped
2 tablespoons minced scallions
