Asparagus With Green Garlic

This was suggested to me from my nephew in NYC

When you sauté or roast asparagus in hot olive oil, the asparagus will have a much more concentrated flavor than it would if steamed or blanched. Here I add the garlic to the pan once the asparagus is just about done, so that the garlic cooks only long enough to soften and sweeten.

Easy Pimiento Cheese

This is another one from We use to eat Pimiento cheese sandwiches for years when we was growing up. Our best friends make something like this too and she dont cook, If she does someone needs to be there watching and reminding her that she is cooking….joking Allie love ya. this is a easy recipe and goes good with chips and or crackers.

1 1/2 cups shredded reduced-fat sharp Cheddar cheese

1/4 cup low-fat mayonnaise
1 4-ounce jar sliced pimientos, drained and chopped
2 tablespoons minced scallions
Hot sauce to taste (optional)

Strawberry & Cream Cheese Sandwich

Found this on It sounds really good. HAPPY BIRTHDAY TO MEI will have to try today since this is my Birthday and this will be my birthday cake per say.  I’m not real big on sweets but i do like strawberries.  This is very simply and easy to make for a quick pick me up or snack in between meals. Chunky Chicken and Chorizo Chili

This is another one from Rachel Ray’s book (2,4,6,8) This would be a good meal for SuperBowl tomorrow. Also you need to serve it with tomorrows recipe, Smoky Cheese Fries. I really like a lot of the stuff she cooks. Rachael cooks some weird stuff at times. And since today is my birthday IM NOT COOKING, but this does sound really good.

1 tablespoon extra virgin olive oil (EVOO), 1 turn of the pan
3/4 pound chorizo, chopped
2 pounds ground chicken

Reverse Shepards Pie

I found this from a Kraft Foods web site.  This is a quick and simply recipe and only take less than half an hour to make. Since i like easy and fast recipes this one tops my short list. But of course i added corn, carrots and chopped bell peppers and garlic and ginger. I love garlic and ginger a lot and use them in a lot of my foods. Hope you try it and enjoy

1lb ground beef

1 can Tomato soup

Persimmon pudding

For all those who like Persimmon Pudding. My grandmother use to make it for us all the time
when we would visit her. This is about the closest recipe that i can find to match her recipe.

2 cups persimmon pulp
2 eggs
1 cup white sugar
4 cups all-purpose flour
2 teaspoons baking soda
6 cups milk
1 tablespoon butter

Preheat the oven to 350 degrees F (175 degrees C).
In a large bowl, stir together the persimmon pulp and eggs using a whisk. Stir in sugar.
Combine the flour and baking soda; stir into the persimmon alternating with milk until
smooth. Pour into a large greased crock or casserole dish. Drop dabs of butter on top.
Bake for 2 hours in the preheated oven, stirring every 15 minutes. Pudding will be dark
brown when finished. Serve hot or cold
