I made this a week or so ago and it was the best cornbread I’ve had. I put a little corn in it and I used regular onions diced since i didn’t have scallions and I used Habanero Cheese since I didn’t have Cheddar Cheese.
10 Tbs all purpose-flour
1/2 cup yellow cornmeal
1 1/2 Tbs yellow cornmeal

3-5 cucumbers peeled and chopped into smaller pieces
1/4 cup of white vinegar
2 packets of dry ranch dressing mix
1 can rotel tomatoes ( i use mild chille)
1 can diced tomatoes ( i use the ones with gralic,oregano,onion)
mix it all together and let it set (if you can! )
eat it with chips or by the spoon full. it is also a good salad dressing….
This stuff is like cucumber crack!

Well its about that time of year again. I will be making more Jalapeno Mint Jelly, I may even have enough Habanero’s to make some Habanero Jelly too. I made both these Jellies a couple years ago and now they are al gone. I think everyone I gave some to liked it very much, (I hope anyways). If any of you out there need more just let me know and I can get ya some. I might have to sell some this time to take care of the cost of the jars and other supplies. Maybe I should open up a small stand out in my front yard. I wish my garden would have done better this year then I could sell all kinds of goodies. Well ok I gotta get busy so I shall catch you guys later

Well i finally started my garden. I think we have it laid out a little better and hope to have a much bigger crop. I will keep pictures updated and we’ll see how it goes.
This patch we have 2 rows of Potatoes, 2 rows of Corn w/Beans, 1 Row of Okra, 1 Row of Squash, 1 row of Beans, I also got 2 Jalapeno plants and 1 Chocolate Habanero plant. All we need now is our Cucumbers, and this patch will be all done.
This patch I have a couple Potatoes at the far end that came up from last year and I got 7 different kinds of peppers and some Garlic, I will have 6 Tomato plants on the other side of the house.
I plan on canning lots of Tomatoes and other things this year so we have stuff eat all year around. I also got to make more Hot Pepper jelly since I’m about out.
I will keep everyone posted with pictures.

This was suggested to me from my nephew in NYC
When you sauté or roast asparagus in hot olive oil, the asparagus will have a much more concentrated flavor than it would if steamed or blanched. Here I add the garlic to the pan once the asparagus is just about done, so that the garlic cooks only long enough to soften and sweeten.

Ok so i made homemade pizza two night ago, I gotta say it turned out really good. We didn’t have a lot of stuff to put on it since i forgot to get pizza toppings. I had some wild hog sausage that i crumbled up and I opened a can of stewed tomatoes and some canned peppers from my garden last year and onion slices and i threw on some sliced turkey sandwich meat and lots of shredded cheese. My wife told me she didn’t really care for homemade pizza because years and years ago she had some and it didn’t turn out good, I gotta say she told me mine was pretty good even if i didn’t have lots of real pizza toppings. Next time i think I’m gonna make a Chicken and Spinach Alfredo pizza and see how that turns out. Will let ya know when i make it and how it turns out.
